For a long time, I couldn’t find handcrafted pizza in Kolkata that felt considered. Everything was fast, loud, and efficient. Very little felt intentional. So instead of continuing the search for the perfect Kolkata pizza, I decided to make it myself. I mean, how difficult could mixing water, flour, and yeast be?
That decision would eventually become Pizza Dojo in 2022.
At this small, weekend table with limited seats (eight is enough) we choose ingredients carefully. Contemporary pizzas are made slowly, without any rush, shortcuts, or performance pressure.
What began as a solution to a personal frustration quietly transformed into a community dining experience. Strangers show up curious, stay for the pizzas and conversations, and leave as friends after having slowed down for a while.
The problem was simple: good food was being rushed. The solution was even simpler: stop rushing.
That’s Pizza Dojo.
